Cookie and Ice cream sandwich

(4 portions)

Ingredients 8 EASIS Choco Cookies with orange 200 g EASIS Vanilla Ice Cream 20 g EASIS Dark Belgian Chocolate 2 tbsp. coconut flour or 2 tbsp. fine chopped pistachios 1½ cup strong brewed coffee

Method Spread 4 of the cookies with the ice cream. Make sure there is a good thick layer of ice cream and use the last 4 cookies as lids.

Chop the chocolate and mix it with either the coconut flour or the fine chopped pistachios. Roll the cookie sandwiches in the chocolate mix and freeze them 1-2 hours.

Serving

Pour a little coffee into 4 small bowls. Place a cookiesandwich in each bowl and pour a little coffee on top. Serve right away.
